Thai Curry Soup ~ Vegan & Gluten Free

I got in a funk with cooking.. we went away on a vacation and then Christmas and New Years… oh and then we got the flu. So needless to say, we were busy and/or I got lazy. Either way I’m back on my game, testing new recipes and cooking up a gluten-free  and plant based storm!

I eat a mostly mexican out, because it’s easily gluten free and vegan without having to alter much on my order. I must say gluten free is hard, plant based is hard… combine the two and get back to me. Damn it’s hard when you are out to eat. I’ve had to order sides of veggies before as a meal because there was literally NOTHING on the menu for me. Oh and last vent.. if you have a veggie burger… make sure it’s gluten free… thanks, K bye! lol Anyone feel me on this?

Alright, rant over….back to the dish! Since we eat a lot of mexican out I try to create dishes at home that are not mexican inspired. Hence my Thai soup here. I’m going to warn you, it has a little heat to it, so if you aren’t a fan of hot stuff, use less Thai curry paste.

So here it is, a gluten free and plant based soup that’s filled with flavor, a little heat and lots of veg.

Thai Curry Vegan Soup

Ingredients

  • 2 carrots
  • 2 baby bella mushrooms
  • 1 yellow bell pepper
  • 1 medium red onion
  • 1 bunch baby bok choy
  • 1/2 cup fresh cilantro, stems removed
  • 1 medium sweet potato
  • 1 13oz can coconut milk
  • rice vermicelli noodles
  • 1/2 Tbsp fish sauce
  • 1/2 Tbsp brown sugar
  • 4 Tbsp olive oil or avocado oil
  • 1 Tbsp freshly grated ginger
  • 2 Tbsp red thai curry paste
  • 2 large garlic cloves
  • 4 cups vegetable broth, I like the brand organic Imagine

Instructions

  1. Wash and prepare all the vegetables and set them aside. Chop the carrots into coins and slice the mushrooms. Cut the peppers into long strips. Cut the red onion in half and then thinly slice into long strips. Peel the skin off the sweet potato and chop into very small cubes. Chop the leafy tops off the bok choy and slice into long thin strips. Chop the bok choy stalk into 1 inch strips.
  2. Add 3 Tbsp of oil to a large pot or dutch oven. Add the minced garlic, grated ginger and Thai red curry paste. Sauté over medium heat for 1-2 minutes.
  3. Add 1 Tbps of oil and the sweet potato. Sauté for another 1-2 minutes.
  4. Add bok choy stalk, peppers, carrots, 1/4 the red onion, mushrooms and vegetable broth.
  5. Bring the pot to a boil, then reduce heat and let simmer for 5 minutes.
  6. While the pot is simmering, boil water and cook the noodles. Drain once cooked and set aside.
  7. Now add coconut milk, fish sauce and brown sugar and bok choy greens to the pot.
  8. To serve, add noodles to a bowl and spoon the soup over top.
  9. Garnish with raw red onion and cilantro.

I know you just read this and thought.. sweet potato… no! My husband is not a fan of sweet potatoes and he agreed that they actually really compliment this dish! This is our new way to get sweet potatoes in our diet.

Eating plant based actually isn’t hard, neither is being gluten free. When you put those two together it can be pretty challenging, especially when you go out to eat. So I’ve been on a mission to create some amazing recipes and save them on my blog for your use and for me to refer to again and again.

Tonight I created a delicious meal, my own spin on enchiladas.

Green Enchilada Bowl

Green Enchilada Bowl – Vegan & Gluten Free

Ingredients

  • 1 packet of Winking Girl green enchilada skillet sauce
  • 1 zucchini (chopped)
  • 1 yellow squash (chopped)
  • 1 sweet red onion (sliced)
  • 1 red pepper (sliced)
  • 1 green pepper (sliced)
  • 1 medium sized carrot (chopped)
  • 5 baby bella mushrooms (chopped)
  • canned mixed beans
  • 1 1/2 cups rice
  • 3 cups water
  • optional for rice: 1 cup spinach, 1 jalapeño & 1/2 cup cilantro
  • optional toppings: salsa, acocado slices, shaved lettuce
  • optional: gluten free tortilla (1/2 per bowl)

Instructions

  1. In a large pot add 2.5 cup water and rice.
  2. Add jalapeño (chop off stem), cilantro and spinach to a blender & blend.
  3. Pour blended mix into the pot with rice. Put on the cover and turn on high.
  4. Once boiling turn down to low heat (mix occasionally).
  5. While the rice cooks chop and slice all veggies.
  6. Place all veggies into a large skillet (we use a large electric skillet).
  7. You shouldn't need any oil, they will cook down to your liking (stir occasionally).
  8. While the veggies cook pour the canned beans into a pot and heat up.
  9. Once cooked to your liking pour in the skillet packet in and fill the bag 1/4 with water and add that to the skillet as well.
  10. Ready to serve once mixed up.
  11. To serve, scoop rice into a bowl, top with veggie mixture and add optional beans, lettuce, avocado and salsa.
  12. Optional toppings: salsa, acocado slices, shaved lettuce
  13. Optional: add a tablespoon of oil to a pan and drop the tortilla on at medium heat, once crisp flip to the other side. Cut with a knife into slices.
