Sourdough Cheese Crackers

Sourdough Cheese Crackers

These crackers are a staple in our home. They are made with simple ingredients and never last more than 2 days.

They are perfect to bring on a hike, pack for on the go lunches, at home or make themed with cookies cutters for a party.

Why Freshly Milled Flour?

Freshly milled wheat contains 40 of the 44 nutrients our body needs.

90% of the nutrients in the wheat is found in the brand & the germ.

Which are removed from majority store bought flour/bread in order to lengthen shelf life.

The berries (which is what you mill) can last for years if stored properly. Just mill as you need.

Not only is what I’m making more tasty, but it has so many nutrients. And although I LOVE to make food fun and think food should never be boring, I know food is meant to fuel our body and give us nutrients so we can grow, heal and fight off illness. That is why I decided to start milling my own flour and it’s so easy. I turn on the machine, pour in the desired amount of berries and then milled flour comes out into bowl I place under the spout.

Ingredients

125 grams FMF, about 1 heaping cup (I typically use soft white and spelt 50/50, I have used hard white and spelt before as well)

2 tablespoons of butter (I use grass-fed butter)

3/4 cup sourdough discard

1 cup grated cheddar cheese (I grate my own)

1/4 tsp onion powder

1/4 Garlic powder

1/4 Paprika

1/4 Salt (I use Redmonds)

1/4 Black pepper

Salt to sprinkle on top

Parchment paper

2 Baking pans

Recipe

Pour your flour into a medium/large mixing bowl.

Mix in the onion powder, garlic power, paprika, salt & black pepper to the flour.

Add shaved or chopped butter into the flour mixture & mix with your hands until it looks like sand.

Add the sourdough and shaved cheese.

Mix with your hands until it becomes a ball & split into 2 even pieces.

On a sheet of parchment paper, roll out your crackers as thin as you can, covering all of the parchment paper (size of our baking pan). You will do this twice.

Now you can either use a pizza rollers to make quick square crackers or use cookie cutters to create fun little shapes. If you choose to do shapes, you will need to keep rolling out the dough until your finish all crackers. This is great if you have kids to help out because the shapes are much more timely than just cutting squares with a pizza cutter.

Finally sprinkle with salt and place in the oven.

Bake at 375 for 15 minutes.

Place the parchment paper on a cooling rack.

Once cooled, add the crackers to an airtight container and store for a few days. They won’t last long any, yes they are that good! They typically last 48 hours max in our house.
