Cucumber Salad

This recipe was one I made up and now it’s a favorite of ours!

What I love about it is you can eat as a side or add some protein, like fish, hard boiled eggs, chicken or even steak to the top.

The dressing is also homemade, simple and so light.

Ingredients:

Baby Cucumbers

Carrots

Red Onions

Chickpeas (1 can is perfect for 2 people)

Fresh basil sliced (optional)

Pumpkin Seeds

Salt & Pepper

Olive Oil

Lemon

Apple Cider Vinegar

Tomatoes

Recipe:

Chop and slice the veggies how you like. We enjoy the cucumbers in coins and the carrots in coins or longer thin sticks (depends on how I feel that day). I like my red onions sliced thin. Make sure to rinse the chickpeas before adding to the salad. Everything added is really portioned to your liking, which is why I didn’t put specific amounts for each ingredient.

Toss all the veggies together & then add salt, pepper, a splash of lemon juice, olive oil and apple cider vinegar. Mix and serve! This is so refreshing and crisp!

I love it as is, with meat added to the top and as a side before eating pizza because the veggies prior to something that could spike your blood sugar actually reduces the spike and keeping your blood sugar level is best for your health.
